Ingredients

- 2 tablespoons dried cascara
- 1 cinnamon stick or 0.5 teaspoon ground cinnamon
- 4 to 6 thin slices fresh ginger
- 2 cups water, plus extra for adjusting strength
- 1 to 2 teaspoons honey or a few drops stevia (optional)
- Fresh lemon wedge
Instructions
- Add water, cascara, cinnamon, and ginger to a small pot.
- Bring to a gentle simmer, then reduce heat and let it steep for 6 to 8 minutes.
- Turn off heat, squeeze in lemon, and sweeten lightly if desired.
- Strain into a mug. Taste. If it’s too strong, add a splash of hot water. If too light, simmer 1 to 2 minutes more.
- For iced tea, cool to room temperature, chill, then pour over ice with a lemon slice.
Notes
Adjust the kick of the tea by varying the amount of ginger. Batch brew to maintain consistency throughout the week.
