Description

Fluffy and portable egg bites with cottage cheese and spinach, perfect for meal prep.


Ingredients

  • 8 eggs
  • 1 cup low fat cottage cheese
  • 1 cup chopped spinach
  • 1/3 cup shredded light cheddar
  • Salt to taste
  • Pepper to taste
  • Pinch of garlic powder

Instructions

  1. Preheat oven to 350°F and spray a muffin tin.
  2. Blend eggs with cottage cheese until smooth.
  3. Stir in spinach, cheddar, salt, pepper, and garlic powder.
  4. Pour mixture into muffin cups, filling each about three-quarters full.
  5. Bake for 18 to 20 minutes until set.
  6. Cool and store in the fridge for up to 4 days, or freeze for up to a month.
  7. Reheat gently before serving.
