Ingredients

- 8 eggs
- 1 cup low fat cottage cheese
- 1 cup chopped spinach
- 1/3 cup shredded light cheddar
- Salt to taste
- Pepper to taste
- Pinch of garlic powder
Instructions
- Preheat oven to 350°F and spray a muffin tin.
- Blend eggs with cottage cheese until smooth.
- Stir in spinach, cheddar, salt, pepper, and garlic powder.
- Pour mixture into muffin cups, filling each about three-quarters full.
- Bake for 18 to 20 minutes until set.
- Cool and store in the fridge for up to 4 days, or freeze for up to a month.
- Reheat gently before serving.
